INGREDIENTS

  • 2 lbs. bone-in, skin-on chicken thighs

  • ½ lb. mixed greens (kale, spinach, chard)

  • 1 tablespoon herbes de Provence spice blend

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  1. Preheat oven to 375.

  2. Put chicken into 9x13 roasting pan and sprinkle with herbs and olive oil.

  3. Rub herbs and oil into chicken with hands and separate in pan so air can circulate.

  4. Bake for 40 minutes, or until chicken is lightly browned.

  5. Spoon pan juices over chicken and move chicken pieces to edges of pan.

  6. Put greens into center of pan. Toss with pan juices, 1 teaspoon each herbes de Provence and salt, and 1 tablespoon olive oil. Return pan to oven for 10-15 minutes, or until chicken registers 165 on a meat thermometer.

  7. Serve chicken on top of greens. Add root vegetable hash as a side and you’ll be experiencing a mini-Thanksgiving!
