I could not believe it possible to add raw bacon to the crockpot and have it turn out this delicious. I call this chili because it has chili flavors, but it works as a soup too. Note: Don’t be afraid of the coconut cream – it doesn’t taste like coconut!

INGREDIENTS

  • 2.5 lbs. boneless, skinless chicken thighs

  • 1 bunch scallions, green ends only, chopped

  • 1 large red pepper, sliced ½ inch thick

  • 1 large yellow pepper, sliced ½ inch thick

  • 8 slices raw paleo bacon (no sugar), chopped

  • 2 tablespoons ground cumin

  • 2 teaspoons sea salt


  • 2 tablespoons coconut flour

  • 3/4 cup homemade chicken broth

  • 6 oz can coconut cream

  • 3 tablespoons tomato paste

  • Juice of one lime

  • Chopped cilantro and salsa verde, for garnish

DIRECTIONS

  1. Layer peppers and scallions at bottom of slow cooker.

  2. Add chicken.

  3. Evenly distribute chopped bacon on top. 

  4. Mix together chicken broth, coconut cream, tomato paste, lime juice and coconut flour and pour over everything.

  5. Cook 4 hours on low or until chicken breaks apart with a fork. Pull it apart a little for easier eating.

  6. Turn off crockpot and let everything sit for 20 minutes, then skim bacon fat from top.

  7. Serve over a little shredded green cabbage with lime, ,or ½ cup white rice.

  8. Garnish with chopped cilantro, salsa verde and/or more lime juice.
