SIBO Friendly Slaw

Cabbage & Lime Slaw

A little bit of tangy cabbage “cooked” in lime juice is the perfect accompaniment to rich meats. It also provides much-needed fiber, vitamins and minerals in a veggie-restricted diet. And its antioxidants help you detoxify. Bye bye bad bacteria!

INGREDIENTS

  • 1 small head of green cabbage, cored and shredded in the food processor

  • 2 teaspoons cumin seeds

  • Juice of 1 lime

  • 2 tablespoons extra virgin olive oil

  • ¼ cup chopped cilantro or parsley

  • Salt and pepper to taste

DIRECTIONS

  1. Toss all ingredients together and let sit for at least an hour, so cabbage softens and “cooks” in the lime juice acid.

  2. Serve in small portions (no more than ½ cup). Will last up to a week in the fridge.
