SIBO-Friendly asian flank steak and
bok choy with peanuts

It’s so nice to switch up flavor profiles and add ethnic variety to your meal plan. SIBO food does not need to be simple and bland! This is a family favorite that requires very little effort.

INGREDIENTS

  • 1.5 lbs grass-fed flank steak (or skirt steak)

  • 2 teaspoons finely grated ginger

  • ¼ cup chopped green ends from a bunch of scallions

  • ¼ cup of coconut aminos

  • Juice of ½ lime

  • 2 teaspoons toasted sesame oil (dark in color)

  • 1 tablespoon coconut oil

  • 2 medium bok choy,washed, dried and slices thin

  • ¼ chopped salted peanuts and cilantro for garnish

DIRECTIONS

  1. Make marinade with ginger, scallion ends, aminos, lime juice and sesame oil. Marinate steak for at least an hour, ideally up to 4.

  2. Take steak out of marinade and pat dry so it can sear. Broil, grill or pan saute over medium-high heat for about 3 minutes per side. (Flank steak is lean and should be cooked medium rare or it will be tough.) Transfer steak to cutting board and let sit for at least 5 minutes.

  3. While steak is resting, heat coconut oil in medium skillet to medium high. Saute bok choy until it wilts and softens a bit – about 5 minutes. Transfer to plates and top with chopped peanuts and cilantro.

  4. Slice steak against the grain and plate with cabbage slaw.
